Chocolate Muffins with Farro Flour and Organic EVO Oil Vaianino
A sweet snack, but not too sweet: these soft and light muffins are made with just a tablespoon of our Vaianino organic extra virgin olive oil and our fragrant organic spelt flour. They're butter-free, but they do contain excellent organic eggs. Delicious. Try them as a snack or for breakfast.
INGREDIENTS
- 80 g of organic spelt flour
- 50 g of sugar
- 3 organic eggs
- 1 tablespoon Vaianino organic extra virgin olive oil
- 100g dark chocolate (melted in a bain-marie)
- 6 g of baking powder
PREPARATION
To make these simple chocolate cupcakes, mix the eggs and sugar in a bowl using an electric mixer at medium speed. Then add the extra virgin olive oil, spelt flour, baking powder, and finally the warm dark chocolate, previously melted in a double boiler. Continue mixing with the electric mixer until the mixture is smooth and creamy. It doesn't take long. Preheat the oven to 180°C (fan assisted) while you fill 8 muffin cups. Bake for 15 minutes.
If you like, you can add a little grated orange peel or some chocolate chips.
