Soft cake with fresh plums without butter
Here's a soft cake with fresh plums from the Vaianino orchard. Delicious and fragrant, this cake is excellent as a snack or served after a meal. Instead of butter, organic sunflower oil was used.
INGREDIENTS
- 400g of fresh organic Stanley plums
- 150 g of organic sunflower seed oil
- 150 g of sugar
- 2 whole eggs
- 1 organic lemon (peel and juice)
- 200 g of 00 flour
- 50 g of milk
- 1 sachet of vanilla
- Half a sachet of baking powder
- 1 pinch of salt
PREPARATION
Wash the plums thoroughly and slice them thinly, without peeling them. Lightly beat the eggs with a fork in a bowl, then add the oil, flour, sugar, milk, baking powder, vanilla, grated lemon zest and juice, and salt. Now use an electric mixer to mix everything together until well combined.
Pour the batter into a 28cm springform pan (lined with parchment paper) and arrange the plum slices on top in a spiral. Sprinkle with a pinch of sugar and bake in a preheated oven at 160°C (320°F) for 40-45 minutes. The surface should be golden brown. Once baked, let it cool completely. This slice of soft plum cake is also delicious with a scoop of vanilla ice cream.
