Ricotta muffins with almonds and chocolate chips

Here we are with the recipe for these delicious muffins, to be honest, they almost look like panettone.

Mix 300 gr with your mixer. of very fresh mixed ricotta (vaccine and sheep's milk) with 130 gr. of sugar and a whole egg. You will get a very good cream. At this point start mixing with a spoon and add 50 gr. of coarsely chopped almonds, 250 gr. of 00 white flour, a sachet of vanilla yeast and 50 gr. of chocolate chips.
At this point you will already have the oven hot at 180 degrees (ventilated) and so fill 12 baking cups. (dose for 12 baking cups for the classic non-stick baking tray of 12). Everything in the oven for 15 minutes.

Test with a toothpick and if necessary, let them stay in the oven for a few more minutes. Crispy on the outside, soft on the inside. Excellent I would say.
