American cookies with spelled flour

American Cookies, those famous chocolate biscuits, are easy to make and above all very good. Try making them with our spelled flour, they are even tastier and a little healthier.


  • 200 g of Vaianino spelled flour
  • 110 g of butter
  • 1 egg
  • 100 g of cane sugar
  • 50 g of granulated sugar
  • 1 pinch of bicarbonate
  • 150 g of chocolate chips
  • 1 pinch of salt


Take the butter out of the fridge at least 30 minutes before starting to make these famous biscuits.
Place the brown sugar and granulated sugar in a bowl, add the softened and chopped butter and work it with a whisk until you obtain a cream.
Add the whole egg and mix until absorbed. Add the spelled flour, the pinch of salt, the pinch of bicarbonate. Knead again until the mixture is smooth, add the chocolate chips and knead again. Place in the fridge covered for half an hour to consolidate.
With your hands, make small balls of about 25 g to obtain more and smaller biscuits, as you can see from the photo. Arrange well apart because they expand and flatten during cooking, on baking paper in a pre-heated oven at 180 degrees for 12/15 minutes.
Remove your biscuits and let them cool.
